| County is ready for a "snow day" and homemade chili |

By SABRINA GARRETT They are “calling a snow day” today at Wilson County Mayor Randall Hutto’s office, but everyone will still be there. Why? Well, for the past 15 years, Carol Knight, Hutto’s assistant, has served up her famous Texas chili to the public on the first “snow day” of the year. “We bring our recipe back from the World Championship chili cook-off in Terlingua, Texas,” she said. “We have gone there for 37 years – if I have a pulse we are there.” Knight is a member of the Chili Appreciation Society International – of which her husband is executive director this year. “This is our way of promoting chili – we have always done it,” she said. Guests who stop by Hutto’s office located in the Wilson County Courthouse in Lebanon should be prepared for a hot and spicy dish. “This is not wimpy chili,” Knight said. |
